Red Three Chops 紅三剁

‎"Red three chops" 紅三剁 is a famous dish in Yunnan. It is not only exquisite and easy to make, but also healthy and delicious. Red three chops, refers to the red in tomato, the red in pork, ‎‎and red pepper‎‎, named after the three red.‎

It's great over rice and noodles. I really like how these 3 ingredients are so simple yet delicious, and I found it really resembles the versatility of a meat bolognese.

Ingredients

  • Ground pork ( can substitute for beef, or Tofu), 1lbs

  • Tomato (any kind), 3-4, same quantity as the meat

  • Chili peppers ( spicy kinds), you adjust the amount of spiciness.

  • Garlic & ginger (optional, minced)

  • Tomato paste (optional)

  • Salt & pepper for seasoning

To Cook:

  1. Prep the ingredients: chop everything to fine pieces. You may use a food processor. For ground pork, you can chop up a pork belly or use grocery store ground pork.

  2. Cook the ground meat. You want to break down the meat as much as possible. Don't add the tomatoes and chilis until the juices in the pan is clear, or there might be unpleasant flavor, especially if you're in the U.S where you can only get ground pork in a fridge.

  3. Add tomato paste and stir fry a bit( optional), add tomato and a bit of water to let the meat sauce simmer and let the flavor mingle.

  4. Add diced chilis, simmer for couple minutes longer and you can plate it.

  5. You can enjoy it as is or great as a leftover to pour on rice and noodles.
